Ginger Mustard Pork Chops

So, like I mentioned last week, I am trying to make a new recipe once a week. Last Monday's meal was a hit! Chad raved about it, I really liked it, and the boys ate it all up too--both of them--even little Charlie who seems to be getting quite opinionated about food! We will definitely be adding this to our meal mix!

Ginger Mustard Pork Chops (from Le Bonheur Club's Key Ingredients) Charlie and Luke give it 2 forks up!

4 (4 oz. 1/2 inch thick) boneless, pork loin chops
2 T. flour
1 T. butter
1 1/2 cups chicken broth
4 tsp. fresh ginger, minced (I used 3)
4 tsp. Dijon mustard
4 tsp. grainy mustard (I use Grey Poupon's Harvest Coarse Ground mustard)
4 green onions
salt and pepper

Dust chops lightly with flour. Melt butter in a large skillet. Add chops and saute over medium-high heat for 2 to 3 minutes per side or until done (because our chops were a little thicker than suggested, I sauted about 5 minutes per side). Remove chops from skillet and keep warm. Add broth to skillet. Increase heat and bring to a boil, scraping up brown bits from bottom of pan. Add ginger and cook, stirring frequently, for 2 minutes. Stir in mustard and onions. Season with salt and pepper. Spoon sauce onto individual serving plates and top with chops! Delicious!!
